I have been a chef for over 30 years. One issue I would like to speak to is food waste. Americans typically will not buy produce that is less than perfect. I propose you have an option for purchasers to select acceptance of imperfect produce perhaps at a discounted rate. This helps farms, grocery stores and the environment. Perhaps it would be called the im-"Perfection" program
