I know that when you use a misting system to keep the fruit moist and fresh it lengthens the shelf life of the fruit. However this causes excess moisture and causes water to build up and sometimes creates moisture on the floor. This is a liability issue and causes the potential for slip and falls.
There are fogging equipment that uses water vapor to keep the fruit cool and with sufficient moisture. It creates a light mist and does not condensate.
I think this would be a good, cost effective solution for your produce departments.
